Chili Crunch Cucumber Salad

Chili Crunch Cucumber Salad - a.k.a. "Smashed Cucumbers" - is definitely one of our favorite appetizers to make! You can also serve them over rice for a quick and easy meal or as a side dish.


INGREDIENTS:

⁃ 2 english cucumbers
⁃ 1 tsp of sugar
⁃ 1 tsp of kosher salt
⁃ 5 cloves of garlic
⁃ 2-3 tbsp of green onions
⁃ 1 tbsp of soy sauce
⁃ 1 tbsp of rice wine vinegar
⁃ 1 tsp of sesame oil
⁃ 2 tbsp of Sijang chili crunch

DIRECTIONS:

  1. Cut ends of the cucumbers off and slice down the middle
  2. Smash the cucumbers with a cleaver until it splits
  3. Cut the cucumbers up diagonally
  4. Put the cucumber pieces into a colander/strainer over a medium sized bowl
  5. Season the cucumbers with 1 tsp of kosher salt and 1 tsp of sugar
  6. Mix thoroughly and set aside to drain for 15 min
  7. Mince 5 cloves of garlic and place into a small bowl
  8. Finely chop 2-3 tbsp of green onions
  9. Add 1 tbsp of soy sauce and 1 tbsp of rice wine vinegar (small bowl)
  10. Add 1 tsp of sesame oil (small bowl)
  11. Add the green onions (small bowl)
  12. Add 2 tbsp of Sijang chili crunch (small bowl)
  13. Mix all of the ingredients in the small bowl together
  14. Pour over the cucumbers and mix well
  15. Add sesame seeds (and whatever else you may like)
  16. Enjoy!
