Chili Crunch Cucumber Salad
Chili Crunch Cucumber Salad - a.k.a. "Smashed Cucumbers" - is definitely one of our favorite appetizers to make! You can also serve them over rice for a quick and easy meal or as a side dish.
INGREDIENTS:
⁃ 2 english cucumbers
⁃ 1 tsp of sugar
⁃ 1 tsp of kosher salt
⁃ 5 cloves of garlic
⁃ 2-3 tbsp of green onions
⁃ 1 tbsp of soy sauce
⁃ 1 tbsp of rice wine vinegar
⁃ 1 tsp of sesame oil
⁃ 2 tbsp of Sijang chili crunch
DIRECTIONS:
- Cut ends of the cucumbers off and slice down the middle
- Smash the cucumbers with a cleaver until it splits
- Cut the cucumbers up diagonally
- Put the cucumber pieces into a colander/strainer over a medium sized bowl
- Season the cucumbers with 1 tsp of kosher salt and 1 tsp of sugar
- Mix thoroughly and set aside to drain for 15 min
- Mince 5 cloves of garlic and place into a small bowl
- Finely chop 2-3 tbsp of green onions
- Add 1 tbsp of soy sauce and 1 tbsp of rice wine vinegar (small bowl)
- Add 1 tsp of sesame oil (small bowl)
- Add the green onions (small bowl)
- Add 2 tbsp of Sijang chili crunch (small bowl)
- Mix all of the ingredients in the small bowl together
- Pour over the cucumbers and mix well
- Add sesame seeds (and whatever else you may like)
- Enjoy!
